I totally agree with you. I asked on Telegram why Majestic was closed source and I was insulted in Russian. To date I still don’t know why they do that.
I am still using OpenIPC. I don’t see any outgoing connection (but I’ve also disabled internet access to it via firewall just to be sure)

That’s so great! Can I just recommend Firefox over Chromium? Perhaps privacy-wise is similar, but at least you send your User Agent to website as “firefox” which tells the websites to still make them compatible

Yup. Nobody denies you from forking Chromium and maintaining an updated version with MV2, but good luck doing that
Chromium is open source but not free (as in freedom). In fact, it is developed by Google and only Google has the power to accept or refuse a PR.
As an example: Manifest V2 is going to be discontinued in favor of V3 on Chromium (and consequently Chrome) despite the outrage of the users and developers.
I also add: don’t talk to the cops. They are there to look for anything to incriminate you
