Ralph Vaughan Williams - The Lark Ascending (I’m partial to Hilary Hahn’s 2004 performance with the London Symphony Orchestra directed by Colin Davis).
I recently discovered the piano and violin version of this, rather than the full orchestral version. It’s much more intimate and would be my choice for a more soothing experience. The orchestral version is so emotional for me, that sometimes I wouldn’t be able to describe it as soothing.
